In subsequent reading, I have discerned that he felt, in fact, deprived of his mother's love. I have also since learned that this was a feeling that was drastically changed in later years, when after many life's experiences, the two came together with love and respect. </p><p>I am so amazed, therefore, at the response of the general public, be it English or American.</p><p>The most disconcerting, of course, is the response by Uju Anya, who was clearly raised in a barn,who would not give a moment's respect to the Queen and her family. Her outrage is based on her own family's experience, and that must be respected and considered. But she must also bear in mind the knowledge that Queen Elizabeth was not the all-powerful. The Parliament set the rules. Therefore, should she desire to wish ill on powers that be, how can this supposedly intelligent being only single one individual, when, in fact, the Parliament sets forth the rules of the provinces and territories. However, there is a time and place for everything in this world. She clearly does not have a clue and is only considering her own agenda. " purse in with me, I got my store card and credit card out and "hid" my purse in the passenger feet area and got out of the car, pushed the lock, slammed the door shut and ....... MY KEYS WERE SITTING ON THE PASSENGER SEAT!!!!</p><p>Also, my phone was in my purse! And, I realized to my dismay, that my spare key was ALSO in my purse! (I had not put it in the house after having the car inspected!) Calling my husband would do me no good. </p><p>I entered the store and went right to customer service and asked if they could call the police to help me gain access to the car. The woman behind the counter told me they had tried that for other customers in the past and the police no longer provided that service. One of the women allowed me to use her phone so I called the insurance company, with whom we have roadside assistance......if ever someone needed assistance, this was now! </p><p>The insurance company gave me the name and number of a company and I asked the gal for another number just in case the first one could not assist me. She then gave me two more numbers to be safe. I called the first number and it went straight to voicemail.....oh dear, that wouldn't work for me! So I called the second number and they said they would be over in 20 minutes. I was clapping for joy!</p><p>Did I mention this was noon and I had neighbors coming to my home at 1:00? I was feeling a bit under the gun here.</p><p>I went out to the car and waited and waited and waited.....you know how five minutes can feel like five hours when you are on edge?? </p><p>There was a young gentlemen collecting carts and I noticed he had a watch on so I called to him and asked him the time. He came over to me and told me it was almost 12:30 so the panic started to rise within me again.....did they forget me??? I then was relating to the young man what I had done and he was so very pleasant and was greeting customers heading into the store and he then said, "Excuse me" and I turned to my thoughts of being deserted. The next thing I knew, this young man appeared with a cell phone!!!! He had gone into the store and borrowed it from another employee! I quickly called the lock people and was told the man would be there in three minutes! </p><p>I was so overcome by the kindness of this young man! I told him how much I appreciated his kindness and I said to him, "now you know I will have to pay this forward" and he joined in the last part of my sentence, "pay this forward!" and we both laughed. I told him I was going to write to the owner of this store to relate how kind his employee was to me.</p><p>The lock man came and in two minutes had my car unlocked and I was on my way!</p><p>The first thing I did when I got home was write to the store to relate what had occurred.</p><p>We are in such a volatile state these days with people angry, prices high, businesses under-staffed, long lines, hiccups in whatever you are trying to accomplish, the feeling no one is doing their job and we have to micro-manage everything or follow up ......we end up complaining, and many times, rightly so! But this experience just renewed my faith! This young man absolutely saved my sanity that day!</p><p>I have noticed I have not been as critical (well, it was only yesterday so we shall see how long that lasts!) and I vow to see the good and the positive from now on!!!</p><p>For those in my area, the store was Karns!</p><p><br /></p><p><br /></p>trishhttp://www.blogger.com/profile/04479244891631110990noreply@blogger.com0tag:blogger.com,1999:blog-747931544127034264.post-87828765991899230402022-03-22T17:57:00.000-07:002022-03-22T17:57:02.237-07:00Reflections - with my binders<p>For each holiday, I have created binders for my Family....when I am gone, if they so choose, they can replicate the holiday as we have for many years as a Family....</p><p>Since Easter is approaching, I have pulled that binder and I have noted each year what our menu is (which is a bit redundant since we always have the same menu!), who has attended the holiday and Family Dinner (sometimes we are not all together) and what activities were enjoyed. (One year we all went kayaking! which was great fun!)</p><p>I noted that in 2020 Bob and I were alone. My entry page for that year reflected the Pandemic, which kept so many families apart. I wrote:</p><p><br /></p><p>EASTER, APRIL, 2020</p><p>This was the most unusual Easter ever.</p><p>It was the year of the Pandemic, world-wide. Everyone had to stay home, in their houses, away from others as the Coronavirus was highly contagious.</p><p>Matango's Candies (where we the get the most wonderful jelly beans every year!) called me in February to tell me they were going to be short jelly beans this year due to a malfunction with a machine but they would put aside several bags for me so I would have them.</p><p>Easter presents were bought for everyone, the house was ready, the ham was in Nanny Barb's (my Mother) freezer. All we needed was our beloved Family to be here.</p><p>That was not to be........the whole country was in lockdown. No schools, no businesses (except for essential such as drug stores and food stores were open and we were not allowed out except for a bit of exercise and fresh air). We also had to wear masks to protect ourselves and others.</p><p><br /></p><p>THEN, the world moved on, albeit with many, many losses, and Easter, 2021 arrived and I wrote two entries:</p><p>EASTER, 2021</p><p>Finally, we are going to be able to be with our Family!!! The New Yorkers will arrive Thursday, April 1st. This is also the day I will be taking Nan (My Mother) for her second vaccination.</p><p>I have prepared foods that I can ahead of time so I can be with the Family and just hug and stare at them!!! </p><p>I am beyond excited!</p><p>It is so hard to believe that we have "lost" one year of our lives....of our Grand's lives.....they will be so much taller, smarter and more adorable!!!!</p><p><br /></p><p>And, then the "official" entry in my binder:</p><p>EASTER, 2021</p><p>The gang arrived Thursday night and we had a Pasta, Meatball, Sausage dinner. It was so very wonderful to see the New Yorkers! Tina came for dinner also but Brandon, Gary and Madeleine did not make it.</p><p>The New Yorkers stayed at a Hampton Inn in Hershey the accommodated dogs as "Louie" Kelly and "Chewie" Giordano also came.</p><p>On Friday, Nanny, Katie, Mia and James decorated a "bunny cake for Barby Bunny! Then we colored tons and tons of eggs!!!! We ordered subs, Pizza, Arrancini and salad from CD Pizza. Nick and Berni visited in the afternoon.</p><p>On Saturday, the New Yorkers spent a lovely day outside and then dropped Kate, Mia and James off so Nanny and Bob could spend the evening with them. They had macaroni and cheese for dinner. We started to play Sorry and then Nanny taught them all how to play Chinese Checkers. They loved it! They all wanted to sleep overnight so we messaged their mothers and they brought their clothes up. However, James decided at the last minute that he wanted to go with his Mother. So, just Katie and Mia slept overnight.</p><p>Easter Sunday Nanny put the ham in the oven early and the girls showered and dressed and we did Mass on the internet. The girls spent the morning creating beautiful, intricate Easter cards for everyone.</p><p>We had Bob, Trish, Nanny Barb, Pudgie, Tina, Brandon, Katie, James, Barby, Sean, Katie and Mia for our Easter dinner. We had ham, macaroni and cheese, potatoes au gratin, mashed sweet potatoes, baked corn, asparagus, green beans, pickled eggs, Victoria sponge cake with fresh whipped cream and fresh raspberries, Lemon Mousse Pie, Matangos Jelly Beans, and Chocolate Egg from Ann D'Amico.</p><p>Tina organized the BEST EVER egg hunt/obstacle course for the kids, which we held on the side lawn. It was so much fun! We were in the passing lane, cruising at about 70 mph when there was the most unbelievable crash, thunder, impact ever! My husband was able to keep the car under control and get into the right lane (thankfully, there were no cars at that moment) and then pull onto the berm.....which was a very small berm. </p><p>My hair, which is long and thick and always in a bun....was knocked out of the pins! My husband, who wears glasses and hearing aids......found his glasses and hearing aids in the back seat after the crash!!!! Such was the impact!!!</p><p>The young man who hit us did own up and pulled over and waited for the State Police. We called the insurance company and the whole process (getting a rental, getting our car towed) took about five (5) hours.....which was way too long for me! There were extraordinary kindnesses throughout and in my muddle, I did not get names at the Raceway Chevrolet, where we pulled our car into off of 78....I will correct that when we return the rental to Bethlehem.....Two men in particular gave us access to a clean bathroom, gave us bottles of cold water and taped our back window (which was shattered) in anticipation of a rain storm!</p><p>We were quite shaken and after grabbing a bite to eat, ventured home. We arrived home around 7:00 p.m. and I was fast asleep by 8:00 pm. from sheer exhaustion over the whole ordeal.</p><p>I had trouble walking because of a pain in my lower back area and my husband had a pain in his chest, probably from the seat belt. So, we rested Saturday and just laid low. By Sunday, we were feeling a bit better and getting our "land legs". </p><p>What impacted me most was the feeling that we were so blessed to be alive. I was actually overcome by this feeling. I felt the need to let my loved ones know this feeling. </p><p>And, then, I thought, why should a dire experience like this make me feel this way? I should be ever so cognizant at all times of my loved ones! So, I leave you with this: Let your loved ones know how much you appreciate them NOW....do not wait, like me, til a terrible, life-threatening experience!</p><p>We are all so fortunate to have our beloved family and friends .</p><p><br /></p>trishhttp://www.blogger.com/profile/04479244891631110990noreply@blogger.com0tag:blogger.com,1999:blog-747931544127034264.post-60547069081337329552022-03-05T18:15:00.002-08:002022-03-05T19:22:10.786-08:00The World Has Gone Mad!<p>I was having a belated Christmas/Birthday Luncheon the other day with a dear friend of many, many years and I was complaining about the daily increase of gas prices and she said to me, "You have to keep it in perspective"......and I thought, "Oh my God, she is sooooo right!"</p><p> I am sleeping in my own warm bed and preparing whatever foods I want and being in touch with my loved ones!......when the people of the Ukraine are fleeing for their lives, leaving their homes and all belongings, not knowing how many of their loved ones will survive!.........how dare I complain about a price increase!!!! </p><p>At Mass tonight we prayed for the people of the Ukraine. </p><p>Where will this all end? </p><p>WE all have to face reality.....our world has been one of bliss til now.....however, this may affect us more than we can now realize. The nuclear equation is one of great concern. </p><p>Recently I wrote about the Pandemic and how it made us all realize the importance of Family and Friends and how we should cherish them every moment........</p><p>It would seem now, more than ever, this thought is paramount! We can take nothing for granted! While going about our daily lives may seem trivial, we have to keep going with our daily routines to shore up our stamina and reserves if needed.</p>trishhttp://www.blogger.com/profile/04479244891631110990noreply@blogger.com0tag:blogger.com,1999:blog-747931544127034264.post-35870277004148137572022-01-21T14:27:00.000-08:002022-01-21T14:27:27.796-08:00Loss of Graciousness (from Pandemic? or not?)<p> I cannot believe it has been many months since I have written in this blog!</p><p>While the Pandemic has affected all of our lives, I was into a somewhat normal routine.....we are</p><p>retired, I cook and bake a lot, we kept in touch with Family and Friends via texting, messaging and</p><p>FaceTime......but, I started to lose much of my OOOOMPH!</p><p> Where I normally was an energizer bunny filling my day with activities and chores from morning to night......I resumed that damn INSOMNIA.....getting up later and later after a night of lost precious sleep and then trying to "catch up" as the day progressed......hence, my lack of writing in this blog.......</p><p>I have been having great fun watching videos relating to cooking......some are so very, very good and others are absolutely laughable.....but kudos to all who put themselves "out there"! I have mentioned this in previous posts. </p><p>One I particularly enjoy is Nicole who does videos for Allrecipes.com. I really like her approach.</p><p>Recently I viewed a video whereby she was going to attempt a "restaurant" dinner at home. She was going to "zhoozh" it up! (This may well have been a video from when we were all basically in lockdown and not going out to restaurants)</p><p>What totally amazed me was at the beginning of the video she confessed that she was married for 16 years and had never once used her wedding china! Nor did she own a tablecloth or linen napkins! (She subsequently borrowed them from an Aunt)</p><p>When I say I was totally amazed, what I mean is that typically when one is "into" foods, they are also into presentation, table settings, table linens, etc. The whole nine yards!</p><p>When we were first married, we had no money whatsoever.....but if I was serving hot dogs, I had a linen tablecloth, linen napkins and candles on the table.....creating whatever meager offering there was a proper setting....... as did most of my girlfriends!</p><p>I recently viewed a video where a young mother prepared a proper English Breakfast for her family and proudly showed the results......however, what I noticed was there was no tablecloth, no placemats and no napkins!.....</p><p>I realize the younger generation want Dishwasher safe china so there is no hand washing involved and many do not want to wash linens.....but, have we come so far down the line with graciousness that our next generation does not even have the knowledge?</p><p>I recently became aware of and joined a group on Facebook called The Art of the Table and another Tables of Elegance - Mastering the Art of Table Setting.......I can't tell you how much fun I am having viewing all the posts and photos.....so right up my alley of interest!!!!</p><p>If you have any interest whatsoever in setting a lovely table for the foods you have labored over - check these sites out.........it has totally revived my energy level!</p>trishhttp://www.blogger.com/profile/04479244891631110990noreply@blogger.com0tag:blogger.com,1999:blog-747931544127034264.post-1793259608717604932021-06-13T16:50:00.001-07:002021-06-13T17:30:57.544-07:00The Demise of Decent Television (Streaming) Viewing<p>Geeze Louise! I am in the kitchen this afternoon, baking, and I have my iPad to "listen" to a good movie......NOT! (We have Prime, Netflix, Hulu, HBO Max, ......) and everything I scrolled through was vile, vulgar, rude, crude.....at 72 do I really want to see people squirm having sex? NOT!...</p><p>I want a good mystery to keep me captivated while I am measuring the flour and the sugar! OR give me a good human interest story! </p><p>What I did see in my scrolling was violence, serial killings, aliens, futuristic, .....not at all what I want to "listen" to on a Sunday afternoon!....I say "listen" because Netflix offers some really intriguing Polish, German, French, Swedish mysteries BUT they all have subtitles! And, I am NOT sitting, aimlessly, watching! I am cooking and "listening"..... so these are of NO good to me!!!! </p><p>I finally ended up "listening" to "American President" with Michael Douglas and Annette Benning on TUBI!......which is free and this movie is quite pleasant, as I have viewed it several times before.</p><p>This whole genre of violence, mayhem, etc. is a key to our current society.....one which I do not subscribe to.....I feel this is not beneficial. Bring back the Frank Capra movies of the 1930's and 1940's.....what is wrong with "feeling good" when leaving a movie? I had prepared most of the Easter foods earlier and froze what I could or at least made a couple days ahead as I wanted to only hug and hug and hug and stare at my Grands!!!!!</p><p>(And Dr. Fauci said I could hug these precious angels!!!!)</p><p>It truly was a most magical experience! Who could possibly believe that we would go more than one year without being with each other? This from a Family that is always in touch and concerned with one another.</p><p>When my Grand Daughters arrived, I actually broke down in tears! They were taller and smarter than when I last saw them and I felt so "left out"! I used to know who their friends were, what they liked to eat, what they didn't like to eat, etc. and I felt so adrift!! When my small Grand Son arrived, I experienced the same feelings.....he seemed so grown up!!!!!</p><p>However, after a short period, we were all back Pre-Pandemic with our love, concern and caring for one another!</p><p>I have mentioned this before but I will do so one more time: I think we have all "suffered" and learned from this Pandemic Experience........we have had scandals involving politicians; we have suffered division among the states of the United States; many, oh, so many have experienced loss of jobs and money......the list of sacrifices and loss can go on and on......but what I wish most fervently is that we do learn from this and NOT FORGET!......we keep this close to our heart and react and behave accordingly...... </p><p>There are so many things we can do.....my 93 year old Mother felt she did not need the stimulus monies so she donated to the Food Bank!....there are so many ways we can all help to unify this country and get us all back on track......but we must NEVER FORGET!...............</p><p>Remember 9/11? I am truly beside myself......might have to send a photo of me hugging the Grands into the Today show!!!!.....</p><p>Instead of setting a beautiful table with the antique, gold painted china and delicate linens, the BOB bought disposable plates so I can sit with the family and just stare at them and enjoy!</p><p>I prepared a large amount of meatballs for the first night.....rigatoni, meatballs, antipasti, bread......and have homemade chicken stock for the Grands to enjoy chicken soup.....macaroni and cheese all made and frozen....picked up the ham today.....we are scrubbing the house so everything is shiny!.....we are just so excited!!!!!</p><p>I am sure that every grandparent who has not been able to see and hug their Grands feels exactly like we do! This Pandemic has been such an experience! </p><p>There are some traditions I just could not pass on.....such as Italian Easter Pie! Usually my granddaughter Madeleine prepares these with me and last year my sister in law came to help. While some people have been able to go about their business without missing a beat, an invitation, a trip or a visit with family, many of us with pre-disposed conditions (or age) have not been able to take that "chance" and, therefore, have been very strict regarding our activities. We have now "lost" almost one year of our grandchildren's lives and to those of us who are close to our Grands, this has been devastating.</p><p>Zoom and FaceTime have proven to be a true God-send but it still cannot replace a HUG!</p><p>In my opinion, those around us have proven to be quite resilient and innovative. </p><p>I do not have to go physically to Mass. I can do so in the safety of my home via Facebook!</p><p>Our local restaurants (God Bless Them!) have adapted to 'take out' and many of us have supported our local eateries.</p><p>Unfortunately, organizations based on volunteerism have suffered. (With some of that pandemic money how about giving to those organizations! My 93 year old Mother said she did not need the stimulus money and gave hers to the Food Bank!)</p><p>I must admit I am now turning into a slug. </p><p>I was in the throes of cleaning, organizing, purging initially........now I keep thinking, "tomorrow"...... and I am not reading, knitting......doing anything productive! Just like when you are on a diet and have hit that "plateau", I am now in a limbo-like state.</p><p>The situation with the vaccinations for the citizens of the United States has proven to be a disaster......depending on in which state you reside. (or, apparently, who you know).</p><p>Being a resident of the state of Pennsylvania, I can only speak for us.......deplorable, inefficient, disorganized, inept. Gee, did I miss any adjective for "Not Good"?</p><p>Our vaccination process has been a cluster from the beginning.....even the local, state and federal representatives in our government agree and are helpless in the whole application and procedural process of vaccinations.</p><p>Being a child of the '50's, I remember the polio vaccinations and how seamless and efficient it was to get our shots.....is this just childhood reflection or is it an accurate remembrance?</p><p>With the "loss" of our loved ones near us for almost a year, the loss of commingling with our dear friends, the interruption of our lifestyles, I can only pray and hope that we REMEMBER this time......when 911 occurred we were a united unit and patriotism and love for one another was at an all time high......please, please, I pray, that we do not move on from this Pandemic and become jaded again and not remember the sacrifices, the loneliness, and the isolation, </p><p><br /></p><p><br /></p><p><br /></p><p><br /></p><p><br /></p><p><br /></p>trishhttp://www.blogger.com/profile/04479244891631110990noreply@blogger.com0tag:blogger.com,1999:blog-747931544127034264.post-43985755208587939622021-01-17T15:18:00.000-08:002021-01-17T15:18:33.348-08:00Sex and the City, Again<p>Back in the day, we were all watching Sex and the City on HBO.....Sarah Jessica Parker (SJP to her fans) was adorable, looking for love - everywhere!- and don't you just love her shoes???</p><p>Well, now fast forward to 2021.....we are in the midst of a Global Pandemic (that has continued way longer than anyone could imagine!!!). ...we cannot socialize with our family and friends, we have cleaned out every closet in the house......Geeze Louise!!!!</p><p>And, now, they announce a new Sex and the City!</p><p>I am up for anything positive! So,.....I begin to view the original series on HBO to reminisce and, quite frankly</p><p>I am a bit perturbed.........the actions of these women now, today, seems a bit......appalling! </p><p>I had loved, loved this series! </p><p>I had loved, loved SJP......yes, I felt we were on that level!</p><p>But throw a global pandemic into the mix and, what mixed feelings emerge!</p><p>They are just now filming the new Sex and The City and it will certainly be interesting!</p><p>I have had a love affair with New York City since I was nine years old! (I mean, what else is there to do in isolation after all that cleaning and purging, right?)</p><p>I have also taken great pride in not duplicating too many meals during these, geeze Louise, what, almost 8 months now!</p><p>As I have mentioned before, I have watched many, many videos of famous chefs, would-be chefs, and wanna-be chefs. ( The latter you must be careful with as some of them do not know a dry measuring cup from a liquid measuring cup or how to "spoon" and not "scoop" flour when baking or how to measure dried herbs and seasonings! Woe to the novice who attempts to follow the wanna-bes!)</p><p>What has been quite enjoyable has been researching menus from different eras and discovering many "gems" that we have not enjoyed in a good while. Also thoroughly satisfying has been putting a 2020 twist on many of these menus!</p><p>For instance, the other night I prepared Swiss Steak with Mashed Potatoes. Many of you may well remember Swiss Steak from your childhood. It was popular in the 1950"s, made of a cheap, tough cut of meat that would miraculously become a tender "melt in your mouth" joy after baking for a couple of hours. Almost every recipe for Swiss Steak contained tomatoes. I assume that was so there was acidity to further "tenderize" the tough cut of meat. My husband does not like cooked tomatoes so I was faced with a predicament if I wanted to proceed with this particular dish. A mirepoix, beef stock, tomato paste, Marsala wine, Worcestershire and sautéed crimini mushrooms did the trick! After two hours bathed in this mixture I had the sought after tender meat! (and the sauce was lick your plate delicious!)</p><p>Chicken and Dumplings, Chicken Soup with Rivels, Ina's Meatloaf and, oh, one disaster!: Swedish Pot Roast......braised in vinegar with brown sugar and cinnamon.....who knew? It was so very, very sweet....my husband told me I did not have to prepare that recipe again!!!</p><p>Researching menus has become my "work, project, goal". It is quite interesting to learn where a recipe originates from, how it became popular, what changes can be made to it. The most interesting fact, in my opinion, is how there really are only so many recipes and each culture, country, peoples put their own spin on it to make it their own.</p><p>If you are on Facebook, you will see my postings nearly every night of What's on the menu? We all know how good a glass of lemon water (I like mine warm) is for you first thing in the morning.<div><br /></div><div>And, of course, lemon is such a good natural cleaner, will help whiten antique linens, take stains out of clothing and just make everything smell fresh!<div><br />
But, I am now incorporating lemon zest or juice in almost all foods I prepare! The lemon just brings all the flavors to a higher level.<br />

Recently I served Shrimp and Grits. As I was completing the preparation of the grits, I finished it off with some fresh lemon juice. Wow!!! It truly tasted amazing.</div><div><br />
I also made a bechamel for a spinach lasagne and, you guessed it! Added some lemon zest and juice to the sauce and, now, I will never make it without the lemon.</div><div><br /></div><div>Lemon juice as the acid in a vinaigrette lightens it up considerably.</div><div><br /></div><div>Fresh lemon juice is a great tenderizer for steak or pork chop marinade and some fresh squeezed lemon before the meat comes off the grill is sublime!</div><div><br /></div><div>I also have been mixing in a bit of zested lemon to my meatball mixture! We enjoy their company, partake of their activities, know their likes and dislikes, know their adorable idiocycrasies, and immensely enjoy the family time!!</p><p>This year, however, is totally different with this Pandemic. Due to travel restrictions, distances, health concerns.....many families have been apart for inordinate amounts of time and will not be able to have a dinner or celebration of this special day with their entire families.</p><p>Typically, I would be with the Grands now, helping out with those crazy schedules the first week of school.</p><p>I find myself having pangs of jealousy when I see and hear grandparents being able to be with their Grands. I wistfully think of the wonderful times I have had with my own Grands.</p><p>Since I am organizing photos in preparation of a photo gallery in the loft, this very well may be contributing to my sadness since I am perusing so many baby photos, first days at school, etc.</p><p>In lieu of being together, I am hoping the family can have a celebration via Zoom. (Whatever would we do without this technical marvel?) We all had to check our calendars if we even wanted to have just coffee with a friend.....gee, am I free? Do I have the time on that particular day?<br />

Then the Pandemic......we were forced to slow down. Most of my friends and acquaintances have<br />
said they are not planning to return to that hectic lifestyle. The old saying "take time to smell the<br />
roses" has resonated with so many of us!<br />
<br />
And so, I began to think of the correlation between slowing down and cooking.<br />
<br />
While we were in the midst of our chaotic schedules, 30 minute meals were the all-time lifesavers! And, the crockpot!<br />
Words will never express the ease that invention has brought to so many households where the Mother works and must be out of the house early in the morning but wants to provide a hearty,<br />
tasty meal to her family in the evening.<br />
<br />
Yes, there is a time and place for all things.<br />
<br />
However, if you do have the time, why rush it?<br />
<br />
One of the major factors in a good dish is the care in the production, the layers of seasonings, the<br />
time allowed for the flavors to develop.<br />
<br />
You just don't get that in a 30 minutes start-to-finish dish, although it has its place, no doubt!<br />
<br />
If you are a "foodie" and were contemplating a trip to France or Italy to take classes at a culinary school - do you think they would rush through and have you out the door in one hour?<br />
<br />
One of these days, perhaps a Sunday, take the time to prepare a wonderful meal. Light the candle<br />
in the kitchen (it will set a wonderful ambience and also "soak" up any pungent odors), put on some delightful music or a great movie, pour a glass of wine and begin.......to thoroughly enjoy yourself!<br />
<br />
Pick a menu you have enjoyed at a restaurant or read about. Don't even look at the clock for your start time, other than to time your cooking the dish! Relax! This should be an experience! One<br />
that you will want to treat yourself to over and over!<br />
<br />
Practice your knife skills while preparing the foods ....take your time. No rush!<br />
<br />
And, when your dish is complete, set a lovely table......linen napkins, china (if it doesn't match,<br />
all the better!), crystal glassware, along with the candles and truly, truly enjoy and savor each<br />
bite of your creation!!!<br />

It has been so oppressively hot recently that I did not want to use the oven so I planned meals that I could grill.<br />
One meal was extra thick pork chops, bone-in, with loin. I took the chops out of the fridge and set them on a plate lined with saran wrap on the counter for a good 30 minutes, to get the chill off. I then ground (on very coarse dial) peppercorns all over the surface of the chops. Then I liberally sprinkled kosher salt all over as well. Flipping the chops over, I repeated the seasonings, on the other side.<br />
I turned the gas grill on, just below high. I did not oil or spray the grates. After a “pre-heating”,<br />
I put the chops on the grill, closed the lid and set the timer for 4 minutes.<br />
( At this point, I remove the saran that had the raw meat on and discarded it. Now I can use the same plate for the cooked chops without worrying about contamination or having to get another plate. I do this for all the raw meats and chicken and it is safer and less dishes.)<br />
I flipped the chops over -there should be an easy release - and then set the timer for an additional 4 minutes and closed the lid.<br />

Then out came my trusty thermometer. I wanted the chops to be 130-135 degrees so I could remove them from the grill and place them on a plate. The residual heat will bring them up to 145* and they must rest for five minutes for the juices to settle. Voila! Perfect, every time!!!<br />

Four minutes with lid closed, then a quick flip. If your meat does not have a quick release, it is<br />
not ready so give it another minute or two. Then another four or five minutes and, once again,<br />
a perfectly grilled piece of meat. Some steaks or chops might be thinner or thicker, so depend on the wonderful thermometer!<br />
<br />
And, lastly, tonight I grilled burgers. Same steps with letting the meat set out a while and seasoning it quite liberally but with the burgers, I do one more thing. I press my thumb in the middle to make<br />
an indentation. This is termed dimpling. This will ensure the burger retains its shape and juices.<br />
One thing you should never, ever do is press down on a burger with the spatula. Do resist this urge and only flip those burgers once. If you are serving cheeseburgers, put the cheese on the burger at two minutes til done and that will melt the cheese but not overcook the burger. So many cook the burger til well done and then add the cheese which, then of course, has to cook even more.<br />

This is how I have operated for over fifty years. It absolutely astounds me when people say they<br />
Never make a list when they go to the store. They say that once they arrive at the store, they purchase whatever looks good and/or what might be on special sale.<br />
<br />
Many, many people (mostly a younger generation) also declare that they never know what they are eating for dinner because they don't know what they will be in the mood for so they decide day of or that very AFTERNOON!<br />
<br />
This totally boggles my brain! Leaving this important decision to the last minute is something I cannot fathom!<br />
<br />
Have I ever been in this position? Absolutely! And that is why it upsets me so! I hate not having the control and confidence that a meal will be on the table at a certain time. I love to plan my day and<div>scurrying around at the last minute is not something I want to do!<br />
<br />
Of course, there have been many, many times that I have tried a new recipe and it just didn't work.....<br />
so that particular well-planned meal was a bust!<br />
<br />
My husband is not fond of crockpot meals.....he likes sauteed, broiled, baked .....not a fan of gravy and sauces, so the crockpot is not my "go to" for meal planning.<br />
<br />
With this "self isolation" and "lockdown" it seems we are all cooking/baking more and becoming so very creative. With the store shelves depleted, who knew or thought that pasta and flour would be<br />
worth their weight in gold right now due to inaccessibility!<div><br /></div><div>Taking time to decide on menus and ingredients gives one power and control over the entire week!</div><div><br /></div><div>I must admit I am in awe of my friends...women who have or had demanding careers, active women</div><div>who do not waste a moment.....they are so very innovative when it comes to trying new recipes, new</div><div>desserts.....they, too, know each day what they are having or preparing.</div><div><br /></div><div>The old Girl Scout rule of "being prepared" resonates........this is a system that truly works!<br /><div><br />

Zoom has proved invaluable, not only for business meetings, but for gatherings of<br />
family and friends. I do believe my Grands will have grown many, many inches since<br />
I last saw them March 1st.<br />
We all learned to appreciate our beloved family and friends all the more in their absence.<br />
Missing the daily contact, hugs and kisses has been especially difficult.<br />
We all were settling into a new "normal" with the hopes and belief that this would soon<br />
pass and we could all get back to the way things were.<br />
The politicians have turned the whole Pandemic into a circus. Their denying science and<br />
sending mixed messages to the public has caused nothing but confusion.<br />
Now it appears we are moving backwards, not forward, with surges in new cases and deaths.<br />
While it initially appeared to affect the elderly the most, now we have the 30-50 year olds<br />
hospitalized and dying. Not to mention our children and even infants.<br />
Most of us are using common sense and wearing masks and following social distancing but<br />
it appears many are not. They must feel they are invincible. We see the news photos of crowded beaches with most not wearing masks. Now many of us are heading back into the safety of our homes due to our being unsure of what (and who) is safe and what is not.<br />
The whole argument of sending our children back to school is not to be believed! "They" say<br />
the children need to learn, to socialize, interact.....well, if they are horribly sick or dead they<br />
can't do anything! When we do not know the scope of this virus, we are constantly learning day by day, how can we rush into anything? Rushing to send our children back to school.....why can we<br />
not take it slow and easy and see how and where this all goes? What is the urgency???<br />
Of course, it is all about perspective. A young mother with three children who worked at an upscale restaurant now finds herself home with her children, struggling to pay the rent or mortgage and buy food. I am retired and not worrying about putting foods on the table or paying the mortgage.......so,<br />
again, it is truly all about perspective.<br />
Even so, the bottom line (to me) is that we go slow......better safe than sorry. With the 42 states having spikes and, basically, going backward.....the slow, steady approach would seem to be the most sane decision at this point in time.<br />
The people who are balking at wearing the masks need to re-think this infringement on their "freedom".....The wearing of masks will enhance and increase their freedom when we can conquer this virus, re-open our businesses, and get back to our normal lives!<br />

Many years ago I was catering a wonderfully posh event and created this chicken dish to wow the<br />
guests, which it did! I did find, however, over the years, that many chefs had similar ideas and I was not the lone creator of this dish. I used to prepare this with a white wine sauce which was<br />
outstanding. Last night I prepared the chicken with clarified butter, also very tasty.<br />
<br />
Ingredients for 2 breasts:<br />
<br />
2 cleaned chicken breasts<br />
1/3 c. Bread crumbs<br />
2 cups fresh baby spinach, stems removed<br />
2 garlic cloves, minced<br />
Zest of 1/4 fresh lemon, chopped<br />
2 T. Chopped Sun Dried Tomatoes, in oil<br />
2 T. Goat cheese<br />
Clarified Butter (Melt stick of butter in 2 c. Measuring cup in microwave. Spoon off foamy top,<br />
Use the clear yellow center part and discard the white at bottom.)<br />

Method of Preparation:<br />

1. Drizzle a bit of the oil from the Sun Dried Tomatoes jar into a saute pan, on medium heat. When hot, add the minced garlic and stir about one minute. Put the spinach into the garlic oil and quickly toss to coat. Keep stirring for 1-2 minutes and spinach will wilt. Remove from heat. Add the lemon zest and the tomatoes, stirring to combine. Divide the spinach into two mounds in the pan and top with the goat cheese. Set aside.<br />
2. Place the chicken breasts between 2 sheets saran wrap and pound til even and thin, about 1/4". Sprinkle with kosher salt and grindings of black pepper.<br />
3. Take each mound of spinach mixture and place on top of each chicken breast. Then tightly roll up each breast, tucking sides and ends in.<br />

4. Wrap each rolled breast tightly in saran wrap and place in fridge for 15 minutes.</div>
5. Remove breasts from fridge and roll lightly in bread crumbs, shaking off excess.<br />
6. Coat bottom of saute pan with clarified butter and heat on medium. When hot, add the chicken breasts seam side down. As breasts turn golden, turn so they brown evenly all over.<br />

7. Place breasts in baking dish, drizzle with a little more clarified butter and finish cooking in a 350* oven for about 10 minutes, or til instant thermometer reads 160*. Remove from oven. (The residual heat will bring the breasts up to 165* while resting.)<br />
