Strawberry Rhubarb Cobbler

this is to die for!  i made this for our luncheon

it is from and is so easy!

fruit mixture:

4 1/2 c. rhubarb stalks cut into 1 inch pieces
1 1/2 c. strawberries, stemmed and sliced
1/2 c. white granulated sugar
2 T. quick cooking tapioca
1 t. grated orange zest, chopped

cobbler crust:

2 T. white granulated sugar
1 c. all purpose flour
1 1/2 t. baking powder
1/4 t. salt
1/4 c. butter
1/4 c. milk
1 egg, lightly beaten

preheat oven to 350*.

in bowl, mix the rhubarb and strawberries with the sugar, tapioca and orange zest.
set aside to blend for 30 minutes to an hour.

in bowl, combine 2 T. sugar, flour, baking powder and salt.  cut butter in with fork
or pastry blender til mixture resembles coarse crumbs.  stir in milk and egg til just

pour fruit into 2 quart casserole dish.  drop batter on fruit.  bake in 350* oven for
35 minutes til cobbler crust is browned.

serve with freshly whipped cream.
